Peruvian Savour

Serving up traditional Peruvian recipes and dishes with a Cantonese influence, Peruvian Savour has proven a popular fixture in Balham. Owners Yos and Bea keep traditional family recipes and dishes that have been passed down through generations alive, while fusing these with some contemporary elements to make for a modern twist.

We caught up with them to find out more about the operation:

How did you get into catering?
For both of us, we think we really got into the restaurant business when we arrived in London. Although we had already studied in Spain (where we grew up), we decided to continue our studies and graduate in London. We’ve worked in several restaurants, hotels, and even in a school kitchen. It was and continues to be a tough road, but passion prevails.

How would you describe the experience of Peruvian cuisine?
We are native Peruvians, we were born and raised eating Peruvian food, therefore we have the flavour in our palates. That said, it has been a challenge to be able to recreate Peruvian dishes outside of our country and, we feel very proud that each diner, when they finish eating, tells us that they felt for a moment in Peru.

What do you think of attitudes towards new foods in the UK?
We think this approach is positive, since England is a country open to different types of food. Both locals and foreigners are willing to try all kinds of food. It provides opportunities for small businesses like ours.

What brings you the most joy in running your own business?
What excites us most is the opportunity to create a space where our guests can enjoy a unique and memorable experience. Finally, the freedom to create dishes based on Peruvian ingredients.

Apart from Peruvian, what are your favourite cuisines?
Bea: Indian, Asian and Mediterranean
Yos: Italian, Argentinian and Mediterranean

To someone who hasn’t eaten with you before, what dish would you most recommend?

Yes or yes, Ceviche, Lomo Saltado and our Pork Belly.

If not working in hospitality, what would you be doing?
Bea: Agronomy
Yos: Nurse

What is the plan for the future?
Our plan is to have a separate, slightly larger space since we’re located inside a market, and to add a few more dishes and drinks to the menu. We’re sure you’ll like it!
