Just Wing It

Jason Hallett and Ryan Dear officially launched Just Wing It in June 2023 after one year of planning and with no prior experience of running a business.

The decision to set up in street food came when sitting on a beach in Cyprus in the summer of 2022 with their other halves, discussing what they’d like to do next in their careers. With a vision in place and a commitment to deliver outstanding wings, burgs and nugs to hungry crowds, the team have just finished trading at their first festival just six weeks after launch.

Welcome to the wonderful world of independent hospitality, gang! So, you’ve just got back from trading at your first ever festival. Was it what you expected?

It was even better than we expected! Very constant, but also amazing feedback with our food, team and our facilities.

That’s great to hear! What surprised you the most?

How well the team adapted to a more stressful environment with a larger number of customers in a shorter space of time. This was our sixth event since trading and we were really proud at how well everyone managed it.

What will you do differently next time?

Think more about the audience and what is going to be more popular with that demographic for that event.

What did you enjoy most?

Being with the team and providing a great service and quality food. Hearing everyone’s feedback and also making connections with other caterers at the event and swapping foods.

What are your plans for the business?

Short-term we want to continue to cater at events and festivals. Our long-term goal is to have a restaurant!

Which festival would you most like to trade at?

Every opportunity is amazing for us but I think our ideal would be the big ones such as Wing Fest, We Are Festival and Creamfields. Fingers crossed for us that we can make a last-minute appearance at Wing Fest London 2023!
