The Future of Food Safety




WHAT'S IT ABOUT?

In a fast-changing world, how do food businesses stay compliant with new legislation, and where can you go for honest, helpful answers? How do you move into new sectors such as production, while maintaining the legality of your business? In this discussion, not only will we seek to answer these questions, but we’ll also be hearing from food safety experts such as Jenny Morris MBE who was instrumental in helping to design the Primary Authority Scheme and Erica Sheward, who implemented it. We will discuss the support available to NCASS members and how NCASS systems can support businesses. We’ll also be looking at how we can collectively bring about positive changes industry-wide.

Jenny Morris received an MBE for her services to Environmental Health in 2014 and is one of the most respected food safety professionals in the industry; Jenny was seconded to LOCOG, the London Olympics Committee and is the former Head of Police at the CIEH. Not only does Jenny have unprecedented experience within the environmental health sector, she too was once a mobile caterer and now serves as an advisor to the NCASS board.





Erica is VP Business Development at Leatherhead Food Research a Science Group Company where she leads the sales function across the business.


Prior to joining Leatherhead in September 2018, Erica was Assistant Director at The Office for Product Safety and Standards (formerly Regulatory Delivery) a directorate within the Department for Business Energy and Industrial Strategy (BEIS) where she led engagement with devolved administrations. Erica is a food scientist by profession and has worked extensively on a number of food safety and better regulation related projects internationally in Jakarta, Nepal, Ukraine, Belarus, Philippines, Australia and the USA.

Prior to joining BEIS Erica was an academic and Food Safety Specialist at the Natural Resources Institute (NRI) at University of Greenwich delivering MSc programmes in Food Safety and Quality Management. Erica was a Senior lecturer in Environmental Heath (Food Safety) at University of Central Lancashire (UCLAN) where she was course leader for the MSc Food Quality and Safety Management programme and supported the delivery of the MSc in Food Safety management via e learn. Erica’s academic career was preceded by nearly 20 years in the food industry in technical and food safety and standards related roles.

Erica has written extensively on the subject of food safety in travel and tourism and her book ‘Aviation Food Safety’, was published October 2005 by ‘Wiley/Blackwell.’ Her previous publications include ‘Your Passport to Food Safety,’ a food safety training manual for cabin crew and ‘In-flight Food Safety Passenger Health & You,’ a cabin crew food safety training programme.

Erica is a Fellow of the Institute of Food Science and technology (IFST), a Fellow of the Royal Society for Public Health (RSPH) and a Fellow of the Higher Education Academy (HEA)

Erica lives in West Sussex and is a passionate trustee and supporter of local cancer charity Cancer United which provides rehabilitation for cancer patients in a dedicated exercise facility.





Mark oversees all of the sustainability initiatives undertaken by NCASS on behalf of our members. Mark worked on the Glastonbury Green Trader Awards for several years, during which time he arranged the first Sustainable Catering training course with the Sustainable Restaurant Association. He co-developed the first 8th Plate project which salvaged nearly 30 tonnes of food from seven festivals in 2015 with Claire O’Neil from ‘A Greener Festival’ and FareShare SW.

Mark also represents the catering industry at Powerful Thinking and ongoing work in support of A Greener Festival. In 2018, Mark re-launched a new version of 8th plate aimed at making food salvage more affordable and practical. After successful trials, it will launch at around 20 festivals this year with the aim of embedding food salvage into event catering.





As a lover of food, Lucy has always chosen to work within food safety teams for Local Authorities. She qualified as an EHO in 2005 and has moved about a bit; working as far south as Hampshire, north as Barnsley and even spent 3 years working for the City of Sydney in Australia. As one of two Team Leaders of the Commercial Team at the Royal Borough of Greenwich, Lucy takes an active role in the primary authority partnership with NCASS. The partnership provides NCASS members with even more confidence when following NCASS’s systems and training.





Bob Fox has been involved in the catering industry for over 25 years both as a caterer and as a director of the country’s leading food trade associations.


He has vast experience in just about all aspects of the catering business particularly the mobile and outside sector and is often called upon to give opinion to the media, government and standards authorities.

Nationwide Caterers Association (NCASS) which now boasts over 5,500 members operating 20,000 units and growing weekly. Membership of NCASS extends right across the catering sector from major multiples to independents and some of the biggest names in the supply chain.

Bob is an accomplished author of books and codes of practice, he edits a quarterly catering magazine and is passionate about the food industry, and in particular the independent sector which he still regards as his roots.

He has been involved in several TV and radio broadcasts as well as writing features for several trade magazines
