Equipment - Ensuring safety in an evolving industry


Throughout this discussion, we’ll be looking at how catering equipment has changed in line with the many developments we’ve seen industry-wide over the last decade. How has the equipment industry been compelled to adapt? We’ll look at the issues which have arisen as a result of the growth of the mobile catering sector, namely the rise of cheap, unattested equipment and the many issues it poses to the safety of its users as well as the safety and integrity of the industry at large.


We’ve reached out to experts in all areas of equipment management to discuss how we can intervene to improve safety for everyone. Read more about them below.

Bob Fox has been involved in the catering industry for over 25 years both as a caterer and as a director of the country’s leading food trade associations.

He has vast experience in just about all aspects of the catering business particularly the mobile and outside sector and is often called upon to give opinion to the media, government and standards authorities.

Nationwide Caterers Association (NCASS) which now boasts over 5,500 members operating 20,000 units and growing weekly. Membership of NCASS extends right across the catering sector from major multiples to independents and some of the biggest names in the supply chain.

Bob is an accomplished author of books and codes of practice, he edits a quarterly catering magazine and is passionate about the food industry, and in particular the independent sector which he still regards as his roots.

He has been involved in several TV and radio broadcasts as well as writing features for several trade magazines

Jay Emery is the author of Spark to a Flame, the insider’s guide to running a mobile pizza business and subject expert contributor to Pizza Pasta magazine.

Jay launched Dingley Dell Enterprises in 1999 making a range of products that evolved into the wood fired ovens and the mobile pizza business systems he is now known for.

Bushman Wood Fired Ovens are still hand-made today, thereby ensuring the quality, strength and endurance of the products. They were also the first in the UK to be DEFRA approved, meaning their customers could rest safe in the knowledge that they are environmentally compliant.

Jay isn’t big on sales talk and is a firm believer that his products speak for themselves; a natural teacher, his invaluable knowledge and experience in the industry has helped over 200 people start their own successful mobile catering businesses and restaurants.

Jay is also a founding member of Renegade Masterminds, an international platform helping businesses in all sectors grow via mentoring.

Working in mechanical services since the mid 1980’s, Brian is a gas engineer with a speciality in LPG. Brian became involved with event catering when a friend started a business and struggled to find a qualified engineer. This coincided with his first trip to the Glastonbury Festival, where he decided he wanted to help improve standards.

Brian lobbied Corgi (now Gas Safe), the HSE and local authorities, with the assistance of Andrew Lansley MP, and was invited to speak on the subject of event and catering gas safety at the CIEH.

Since then, Brian has worked with catering trailer builders on design and installation, has been part of the Gas Safety team at Glastonbury Festival for 10 years, and has worked on many other large events, including testing and inspecting large pyrotechnic displays such as the Arcardia Spider.

Brian is a contributor to NCASS's own Gas Safety guidelines and the current UKLPG code of practice for event catering gas use.
